1 celery stalk, diced
1 squirt of lemon juice
¼ cup Low fat yoghurt
¼ red onion, diced
A few baby spinach leaves
½ whole grain bagel or slice of whole wheat toast or similar
Mix the tuna, celery, low fat yoghurt, squirt of lemon juice and red onion together with a fork. If you can do without butter on your bagel or toast, then that is great. Place spinach leaves on top of toasted bagel and top with the tuna mixture.
This lunch is delightful served with tomato juice and a lemon wedge.
